HOW TO MAKE CAULIFLOWER RICE

 

Cut the cauliflower into quarters and break it into large florets using your hands. Thoroughly wash and dry the cauliflower. Once dry, transfer the cauliflower to a food processor, filling only approximately 2/3 way full. You may need to do this in two batches.

Pulse the cauliflower in 1-second pulses or until desired size (it will resemble couscous). If you do not have a food processor, you can grate the florets on the large holes of a food grater, however this method is much messier and time consuming, so use a food processor if you have one.

To cook your cauliflower rice- Heat 1 tablespoon of butter or olive oil in a large skillet over medium heat. Stir in couscous and sprinkle with a little salt and pepper, stir. Cover the skillet and cook for approximately 5 minutes or until the couscous is desired tenderness.
